Sea Bass with Asparagus recipe
Four 12 inch squares of aluminum
Four six ounce fillets of sea bass
12 organic asparagus spears (remove woody ends)
1/4 lb of organic shiitake mushrooms (remove stems)
One tbsp of fresh grated ginger
Two tbsp of low sodium soy sauce
Two tbsp of sake
Salt and pepper for seasoning
Preheat oven to 400 degrees. Place a fillet in the middle of each aluminum square. Place the asparagus, mushrooms and ginger on top of the fish. Lightly sprinkle each fillet with soy sauce and sake and season with salt and pepper. Fold the foil over the fish and seal the edges. Place each foil on a large baking pan and bake for 20 to 25 minutes.
Curried Sweet Potato and Lentil Soup recipe
Two tbsp of canola oil
One white onion, roughly chopped
Three minced garlic cloves
One tbsp of minced fresh ginger
Two tbsp of curry powder
One tsp of salt
1/2 tsp of black pepper
Four chopped organic plum tomatoes
One cup of dried lentils
One qt of unsalted vegetable stock
One 14 oz can of light coconut milk
One pound of organic peeled sweet potatoes, cut into 1/2 inch slices.
One small organic zucchini, roughly chopped
1/2 cup of organic green beans cut into thirds
1/2 cup of cilantro
Heat oil in pan over medium-high heat. Add onions and stir occasionally until they soften. Add ginger and garlic and let cook for about one minute. Stir in curry powder, salt and pepper and cook for about one to two minutes. Add tomatoes, lentils, vegetable stock and coconut milk and stir. Bring mixture to a boil. Partially and turn heat to low, allowing soup to gently bubble. Stir occasionally until lentils begin to soften. Add sweet potatoes and more water if necessary. Stir in zucchini and green beans and let cook until lentils and vegetables are tender. Finally, add cilantro and a small amount of salt and pepper.
Celery Avocado Stuffing recipe
Two large organic avocados
One small bunch of organic parsley
Five to six ribs of organic celery
One bunch of organic kale
Mash avocados in medium sized bowl. Chop parsley and dice celery into small cubes. Add celery and parsley to mashed avocados. Spread mixture onto kale leaves and eat like a wrap. Spices or herbs can be added if desired.
Spirulina Popcorn Recipe – Given to us by Green Star Oasis
1/2 Cup Organic Popcorn
1/3 Cup Organic Coconut Oil
1 Tsp Sea Salt
1 Tbsp Spirulina Powder
Heat 1 Tablespoon of coconut oil in a 3-quart saucepan on medium high heat until melted. Add corn kernels and cover with lid. Cook on medium heat shaking periodically to keep kernels from burning. If needed place remaining coconut oil over lowest heat until melted. Once popping has stopped completely, remove from heat and carefully pour popcorn into a large bowl. Add melted coconut oil and toss until well covered. Sprinkle in sea salt and spirulina. Toss until well mixed and enjoy!
